Our olive oil is produced from the old local Istarska Bjelica variety (70%) mixed with Leccino and Pendolino (30%). The olives are handpicked and processed the same day through cold extraction.
The oil is decanted naturally and stored in stainless steel barrels. Kabola olive oil is golden green in colour, with the aroma and flavour of fresh olives and grass. It has medium bitterness and spiciness.
It is quite harmonious and well rounded. Its freshness and lasting scent makes it the perfect pair to fish, raw shrimp, Istrian cold cuts (Istrian prosciutto, sheep milk cheese), and it is exceptional with all kinds of salads.
